Simple But Spectacular

I think we're at the point in our relationship where I let my guard down and reveal something intensely personal. That's right, my summer corn salad recipe.

Last summer I haphazardly threw this salad together, tasted it, did a double-take, and then ate it all with a giant serving spoon. Then, I proceeded to make it at least three times a week until summer was over, giant serving spoon at the ready.

And now it's time to share it with you. It's okay, you don't have to say anything. I can see the happy tears. You've given me so much. The least I can give you is an amazing corn salad.

Summer Corn Salad

4 fresh ears of corn on the cob
3 medium tomatoes, diced
1 cup feta or blue cheese, crumbled
1 handful fresh chives, chopped
Salt
Pepper

Directions
Cut kernals directly off cob and place in a medium bowl. Add tomatoes, cheese, herbs, and salt and pepper to taste. Eat with a giant serving spoon.

Hint: You can mix this up a zillion different ways. Use any cheese you like and basically any fresh herbs. It's really hard to screw up.

It's simple but spectacular. Kind of like our relationship, don't you think?

Beef and Bean Burritos: My Childhood Favorite

When I was a kid, few things thrilled me more than walking into our kitchen and seeing my mom making a giant platter of grilled burritos. Maybe that makes you think that I didn't have a very thrilling childhood, but you should reserve your judgment until you've tried these.

There is nothing fancy about these burritos. I've tried fancifying them with extra ingredients or spices, but I always return to them in their simplest form. So that is what I'm going to share with you. Let's get started, shall we?

We start with the beans. I've gotten in the habit of making my own refried beans, because it's easy and delicious. But, you can easily skip this step and use a can of refried beans. You'll still get full credit.

Dump a large can of pinto beans (drain a little bean juice off first, but not all of it) and a small can of diced green chiles into a medium saucepan. Add a pat of butter and stir it all around. Let it simmer on a low/medium stove for a while and bubble and brew all together. When they're done cooking, use a zhuzher to zhuzh them into the blissful smooth beans they were meant to be.

Next, brown a pound of ground beef in a frying pan. Add some spices--salt, pepper, and cumin. I also like some of this Mexican all-purpose seasoning.

Next, it's time to drain the fat. Push all of the meat to the end of the frying pan furthest from the handle. Tip the pan so the grease drains away from the meat and toward the handle. Give it enough time to really accumulate and think of all the calories you're saving by doing this. Take a few paper towels and stick them right in the pan to absorb all that fat. If you don't have any paper towels, you could use a maxi pad or diaper.
Now it's time to marry the beans with the beef. (If you're using canned refried beans, this is where you dump them right into your meat.)

Do you, Beef, take Beans to be your lawfully wedded fiber? And do you, Beans, take Beef to be your lawfully wedded protein? You may now get busy!
Don't they make the best couple? You should have a nice, thick, beefy-beany paste. Let it honeymoon for a minute while you heat your griddle to 300-350 degrees.
Now you're ready to set up a little burrito making station. Get out your flour tortillas, shredded cheese, and two plates.
Take a tortilla and spread some of the beef and bean mixture right down the middle, then sprinkle it with cheese and place it on a plate in the microwave for 22 seconds. (Why 22 seconds? Because I feel bad for all the numbers that aren't integers of 5; they always get left out of the microwaving fun.) You need to warm this in the microwave so that your tortilla is nice and pliable. While one burrito is in the microwave, begin preparing the next one. That's why you need two plates--one in the microwave and one at your fixing station.
Take your soft tortilla and tuck the ends in first and then roll it up, nice and tight.
You're ready to grill! Place the burrito on the grill, with the fold directly on the grill. This will seal it closed and help to keep it's shape. Add the burritos one by one to the prepared grill.
You want to grill them on four sides for maximum tastiness. This is the grilling order: bottom (with fold), top, side, side. The burritos will all be at different stages of grilling, so they will rotate and come off the grill in the same order that they went on.

If you're making a lot of burritos, you can turn your oven to a low heat (as low as it will go) and put the finished burritos on a tray in the oven to keep them all warm until serving.

Alright, it's time to eat! Serve your burritos with salsa, guacamole, sour cream, or my personal favorite--KETCHUP! Mmmmm!
I think you should make these today. I think they will make you happy. Plus, your house will smell amazing. Plus, you'll have a deeper understanding of my blog and all my references to burritos. And I think that's important for both of us.

Good Morning, Muffin

Here's a happy little recipe for you.  It is ridiculously easy, low-fat, low-calorie, and one of my favorite things to serve house guests.  And my family.  And myself.

Orange Morning Muffins

Ingredients:
1 Orange cake mix (Duncan Hines Orange Supreme is what I use)
1 14.5 oz. can of pumpkin (not pumpkin pie mix, just plain pumpkin)
1 egg
1 c. water

Preheat oven according to directions on cake mix.  Mix all ingredients together and divide into prepared muffin tins.  Bake 18-23 minutes.  Remove to a cooling rack for a few minutes and then drizzle icing on the still-warm muffins.

Icing

Ingredients:
3/4 c. Powdered sugar
2 T. Orange juice or milk
1/8 t. Vanilla

Mix together and add more sugar or liquid depending on the consistency you want.

If you're hesitant to use pumpkin, just trust me on this one.  I promise that you can't taste it at all.  You can beat me up if I'm wrong.

You can also modify the recipe and make it with any of the following cake mixes: chocolate, spice, carrot, lemon, banana, and even strawberry.  But orange is definitely my favorite.

Try it out and let me know what you think!

Can I Interest You in a Smoothie?

Remember when smoothies first hit the scene?  Everybody was ga-ga over smoothies.  Smoothies were the latest celebrity accessory, long before tiny dogs.  Everybody who was anybody was sipping a smoothie.  And when Zuka Juice (yes, that was Jamba's original, cooler name) first settled in my neck of the woods, I gladly handed over the cost of a high-class combo meal for my oversized styrofoam cup.  Often.  Frequently.  Regularly.

And I lived happily ever after.

You know, until I started to have some doubts about smoothies.  The first doubt came in the form of an empty wallet.  I hated to admit it, I hated to crash the smoothie party, but I had to wonder--was anybody else concerned about the cost of these smoothies?

This problem was temporarily solved when I outsmarted The Man and began ordering one smoothie and two cups.  A smoothie, it turned out, could be SHARED!  It chopped the savings in HALF!

Then, The Man caught on to me and suddenly one day, the freckled fresh-faced girl behind the counter informed me that they were unable to split my smoothie.  One smoothie, one cup.  New policy.

And you'd think that would be enough to put me over the edge with smoothies, but you know, I still went back for more.  (Though I secretly snatched two straws without paying for the extra one.)

My relationship with ginormous, expensive smoothies did not really suffer until I began my education in caloric intake.  And how it affects the size of your butt.  One day, I began flipping through the nutritional information binder next to where the napkins and straws are stacked.  I haphazardly looked up my smoothie (named something like "Mystical Morning Sunrise") and ran my finger down the page to find the calories.

And then I blinked.

And blinked again.

And shook my head with a cartoon sound effect.

14 BILLION CALORIES?  FOR THE SMALLEST SIZE?

HOLY CRAP!  ONE SMOOTHIE COULD FEED THE ENTIRE CONTINENT OF AFRICA!

I glanced briefly at the fat grams and suffered a mild stroke.

It was about this time that my smoothie was handed to me--my name emblazoned on the wet receipt stuck to the styrofoam.  I didn't want to drink it, knowing what I now knew, and I considered dumping it in the garbage can by the door and making a run for it.

But I paid like $6.95 for the thing, so I drank it anyway.

That was my last smoothie.

(OK, it wasn't.  I lied there.  I was caught up in the drama.)

Anyway, all this brings me to my point today: a recipe.  My recipe for a low-calorie, low-fat, delicious smoothie that won't break your wallet.

Daybreak Dewdrop Enlightenment
(Two can play this naming game!)
  • 2 cups ice
  • 1 cup sliced strawberries
  • 1 cup diced mango
  • 1 cup Dannon Light & Fit Vanilla yogurt
  • 1-2 cups skim milk (pick your thick)
  • 1/2 cup oats (trust me on this one)
  • 1-4 Tablespoon sweetener (sugar, Splenda, or honey)
Blend and serve in as many cups as you like!  That's my policy.
